Deviled Eggs

My family loves Deviled Eggs, we can literally eat a plate of 12 between us in minutes.  I have tried many different kinds of these little beauties but I do like a sweet smoky version over the plain old mayo and egg thrown on a plate with paprika. So here is my recipe for my ultimate BBQ side.

6 Eggs (Actually you’ll need 8 because I always screw up a few when I peel them)

1/2 cup Miracle whip

1/2 teaspoon Smoked Paprika plus more for dusting

Place the eggs in a pot of cold water, water should be a few inches deeper than the eggs, bring to the boil and boil for 4 minutes, then remove from heat and let the eggs sit in the pan for 10 minutes.  This way of cooking the eggs stops them from over cooking and you will not get a grey rim around the egg yolk, just fluffy yellow perfectly boiled eggs.

Drain the water, leaving the eggs in the pot and run water over the eggs, peel each of them and once peeled cut in half. Scoop out the yolk and put into a bowl and place the egg halves on a deviled egg plate or regular plate if you don’t have one.

Once you have all the eggs peeled and the yolks are in the bowl, mash the yolks up until they look like corn meal, mix in 1/2 cup Miracle Whip and the Smoked Paprika.

Place the mixture into a piping bag or a ziploc bag that you can cut a corner out of and pipe into the egg whites. Once completed put a little smoked paprika into a sieve and tap the powder over the eggs.

I sadly don’t think I can eat eggs anymore, they made me really sick last week, twice…. I hope it was just a bad batch of eggs, I threw the rest out and and I’m kinda scared to try again 🙁

All your photos on Twitter always make me so envious! This recipe is sooooo easy compared to mine. I found it online several years ago – Japanese-esq…. with wasabi, soy sauce, green onions & panko bread crumbs. They’re delicious, but take a bit more prep than yours above. The smoked paprika sounds yummy!
