My first cooking post on this site, I had Glamorous Cooking, but it was really difficult running 5 websites, so I shut a few down and now I am down to only 3… I think! Anyway I thought the first recipe that I would share with you guys is actually my 16 year old daughters go to snack. She loves making Banana Fritters and came up with this herself last year.
Makes 4 servings
4 Egg Roll Wrappers
Light Brown Sugar
Confectioners Sugar for dusting
Honey, Chocolate Sauce or Caramel Sauce
Whipped Cream (optional)
Little bowl of water
Peel the bananas and cut the tips off, then cut the bananas in half. Put 1 Egg Roll wrapper on a cutting board with a point of the wrapper facing you. Take 1/2 a banana and sprinkle brown sugar over, lightly covering it completely. Now imagine you are making an envelope……
Place half a banana in the middle of the wrapper and fold bottom corner over the banana. Fold the sides up and bring them to the middle of the banana, covering your first point. You now should have an open envelope shape. To make the last point stick to the wrapper dip your finger in the water and wet the last edges, then finish by bringing down the last point and rub the sides to stick. Repeat the process for the other 3 Fritters.
Heat about 2 inches of oil in a frying pan, once hot, carefully place the Banana Fritter into the oil and roll until browned, it should only take a few mins, don’t leave unattended as they can burn quickly. Once browned take out with tongs and place on a paper towel to drain.
Once you have fried the Fritters place on a plate and sprinkle with cinnamon, drizzle with honey and dust with confectioners sugar and serve. Arianna also likes to use cinnamon with chocolate or caramel sauce and tops with whipped cream.
